Thursday 30th January 2025 - Thursday 30th January 2025
6:00 pm - 9:00 pm

About this class

Join Chef Eloise and learn the secrets to restaurant quality sauces while enjoying an evening of delicious food.

Explore three distinct sauce families: rich reductions, aromatic herb-based sauces, and indulgent butter-based sauces.

These versatile sauces are perfect for impressing guests at dinner parties or elevating your weeknight meals. Through a combination of cooking and demos Eloise will show you the secrets to perfect flavour combinations and essential techniques.

You will work in pairs and the class will cover the following sauces and dishes:

  • Learn how to transform the foundations of mire poix and stocks  into rich and flavourful sauces such as peppercorn and red wine jus. Paired with either beef or lamb depending on local availability.
  • Fresh and flavourful chimichurri and salsa verde accompanied by crushed new potatoes.
  • Buttery and satisfying beurre noisette/blanc served with seasonal greens.
