Medi’s Mezze

Serve this Turkish-inspired mezze dish alongside bread for dippingYou can substitute the carrot for courgette. 

Serves 4 people

Method

  1. Peel and grate the carrot.
  2. Heat the olive oil over a low heat and add the carrotGently cook until softened but not brownedSeason with a little salt and set aside to cool. 
  3. Add enough natural yoghurt into the cooked carrot to create a dip like consistencyStart with a couple of tablespoons at first. 
  4. Very finely chop the garlic and stir through. 
  5. Season with salt and pepper.
  6. Gently toast the walnuts in a dry frying panAllow to cool, then chop and scatter over the mezze.

3 large carrots

Natural yoghurt – approx. 300g 

1 clove of garlic 

Salt and pepper

Handful of walnuts
