About this class

Bring joy and sweet tidings with frangipane mince pies and a gently spiced giant gingerbread wreath in this fun and festive baking session. In the three-hour class pastry chef Jessica Dames will show you how to perfect your pastry technique and hone your piping skills.
For the mince pies, you will prepare a batch of light, shortcrust pastry and a jarful of sweet mincemeat. You will blend your own frangipane for their topping. For the wreath, you will mix and spice a gingerbread dough before rolling and shaping it into an impressive wreath design. Once baked, let your imagination fly as you decorate your creation with your own royal icing – stars, sweet angels, a message to a loved one or perhaps a design of your own for that individual touch. Each of these traditional-with-a-twist festive treats make a lovely gift or a delicious addition to the Christmas teatime table

About your chef
Jessica Dames is currently working as a private chef and trained at Tante Marie Culinary Academy. She has worked in a wide range of restaurants, catering kitchens and private homes. She grew up in South Africa and travelled extensively, so loves to bring these influences into her cooking. She is always on the hunt for weird and wonderful ingredients to create new dishes, loves seasonal and local produce and feels strongly about reducing food waste. Expect beautifully simple food, big on flavour.
