A delicious cake, great for using up some bananas on the turn! Can easily be made vegan by following the substitutes listed.
Method
Preheat the oven to 180 degrees centigrade in a fan oven
- In a bowl whisk butter and sugar until creamy
- Cover the bottom of a 18-20cm cake tin with baking parchment and spread the creamed butter and sugar mixture evenly on top
- Cut the bananas into strips or rounds and add them on top of the creamed sugar and butter mixture
- In another bowl mix all the batter ingredients till smooth
- Add the batter on top of the bananas and level it, then cook in the preheated oven for 30-40mins
- Once cooled, gently turn it upside down onto a plate
- Serve with dusted cinnamon and double cream

125g Flour
60ml milk or soy milk
1 tsp baking powder
