Banana Tarte Tatin

A delicious cake, great for using up some bananas on the turn! Can easily be made vegan by following the substitutes listed.

Serves 8 people

Method

Preheat the oven to 180 degrees centigrade in a fan oven

  • In a bowl whisk butter and sugar until creamy
  • Cover the bottom of a 18-20cm cake tin with baking parchment and spread the creamed butter and sugar mixture evenly on top
  • Cut the bananas into strips or rounds and add them on top of the creamed sugar and butter mixture
  • In another bowl mix all the batter ingredients till smooth
  • Add the batter on top of the bananas and level it, then cook in the preheated oven for 30-40mins
  • Once cooled, gently turn it upside down onto a plate
  • Serve with dusted cinnamon and double cream

 

Ingredients

50g soft butter or margarine
50g golden sugar
3 bananas

Batter ingredients:
50g soft butter or margarine
75g caster sugar
1 egg or 1 tsp linseed and 3 tsp hot water
125g Flour
60ml milk or soy milk
1 tsp baking powder
