Black Bean Hummus

Try different combinations of spices. Add more lemon juice for a little extra kick. This hummus goes great with some toasted pita bread.

Serves 6 people

Method

Mince garlic in the bowl of a food processor.

Add black beans, 2 tbsp reserved liquid, 2 tbsp lemon juice, peanut butter, oil, salt, cumin, and cayenne pepper.

Process until smooth, scraping down the sides as needed.

Add additional seasoning and liquid to taste.

Garnish with paprika and Greek olives.

Or toasted sesame seeds.

1 clove garlic

1 tin black beans 400g (drained but save the liquid)

2 tbsp lemon juice

1 tbsp peanut butter

2 tbsp olive oil

1 tsp salt

1 tsp ground cumin

½ tsp cayenne pepper
