Blackberry Wine

This simple fruit wine recipe is a great way to try brewing for the first time!

Method

  1. Wash a food grade bucket with very hot soapy water and rinse well.
  2. Combine the tea, water and sugar in the bucket and stir until the sugar was dissolved.
  3. Then add the lemon juice and blackberries and cover with a tight lid.
  4. Check the brew once a day to stir and see if it is fermenting (there is natural yeast on the berries so there should be no need to add commercial yeast).
  5. After three days, remove the berries and strain through muslin into a bottle or demijohn with an airlock fitted.
  6. After a month or two it can be decanted into old wine bottles (carefully leaving behind any sediment) and enjoyed! Although the longer you can resist and leave it to age, the better the flavour.

  • 1 kilo(s) blackberries
  • 50 mL strong black tea
  • 2 liter(s) filtered water
  • 750 grams sugar
  • 0.5 Lemon, juiced
