Chocolate, Coconut, Date & Walnut Bars

A tasty and healthier alternative to chocolate brownie. These bars will help satisfy your sweet tooth without all the added sugar.

Serves people

Method

  1. Coat 20cm x 20cm baking pan with nonstick vegetable oil spray;
  2. Line with parchment, leaving overhang on all sides.
  3. Add the dates, raw cacao powder, vanilla, salt, water, (peanut butter) into a food processor and blend until smooth (you may need to stop and scrape down sides a few times) then transfer to a mixing bowl.
  4. Add 100g of the cocounut to the mix and stir in.
  5. If using walnuts – wrap them in a tea towel and crush them with a rolling pin – then add to the mix and stir in.
  6. Empty the mix onto the parchment in the prepared pan and spread out. You can place a piece of parchment on top and use a glass to roll it out more evenly.
  7. Scatter the remaining 50g coconut over top and lightly press in to allow it to stick adhere.
  8. Chill for 20 minutes then slice into bars.

  • 300 grams Medjool Dates
  • 100 grams Raw Cacao Powder
  • 150 grams Desiccated Coconut
  • 70 grams Walnuts (Optional)
  • 3 grams Natural Salt
  • 2 tablespoon(s) Water
  • 1 teaspoon(s) Vanilla
  • 50 grams Peanut Butter (Optional)
