Fair Trade Banana and Chocolate Bread

A great way to use up those overripe bananas. This recipe is great for afternoon teas

Serves 6 people

Method

  1. Grease the base of a 8.5x19cm loaf tine and line with greaseproof paper.
  2. Preheat oven to 180oC
  3. In a bowl mash up 4 of the bananas, yoghurt together and put aside.
  4. In a seperate bowl mix the butter and sugar together until smooth creamy and white.
  5. Add the eggs one at a time and blend in.
  6. Seive in the flour and bicarbonate of soda and mix in gently.
  7. Add in the banana youghurt mix and blend in with 1/2 of the chocolate chunks. Pour 1/2 the mix into the loaf tin and lay on top the remaining 2 bananas sliced lengthways and sprinkle the remaining chocolate on top.
  8. Pour over the remaining cake mixture and place in the oven. Bake for 60-90 minutes.

  • 6 Bananas
  • 150 grams Caster Sugar
  • 125 grams Butter
  • 2 Free Range Eggs
  • 50 mL Natural Yoghurt
  • 200 grams Self Raising Flour
  • 1 teaspoon(s) Bicarbonate of Soda
  • 100 grams Fair Trade Dark Chocolate
