Fruit Crumble

Adding oats or some chopped nuts gives the crumble topping extra texture. Use whichever spices you prefer – or none at all! 

Serves 4 people

Method

  1. Preheat the oven to 200°C
  2. Peel and core the fruit and chop it into chunks Put it into a saucepan with about 3 tbsp sugar and 4 tbsp water. Bring to the boil and let it cook gently for a few minutes – the fruit should be a bit soft but not mushy.
  3. Add the spices – according to how much you like them. Put the fruit into an oven dish. 
  4. Sieve the flour into a large bowl. Cut the butter into chunks and rub it into the flour with your fingertips. When it looks like breadcrumbs, mix in the sugar, and a little extra spice if you like. 
  5. Spread the crumble topping over the fruit so that it is completely covered.
  6. Place in the preheated oven and bake for 20 – 30 minutes. When it is ready, the crumble should be starting to turn pale golden brown.
  7. Serve warm with custard, ice cream or yoghurt.

Prep time: 10 mins

Cook time: 35 mins 

1kg of mixed fruit

(like apples, pears, plums, rhubarb, strawberries, berries, grapes even frozen fruit) 

3 tbsp sugar

4 tbsp water

1 tsp of cinnamon

 Optional: 1 tbsp of balsamic vinegar Or zest of 1 orange

140g of flour (or use half oats)  

70g butter

35g sugar
