Fruity Chocolate Brownie

Add a delicious twist to your brownies with some frozen berries.

Serves people

Method

  1. Pre-heat oven to 160 degrees and line a 20cm(ish) square baking tin with baking paper.
  2. Whisk the eggs and sugar in a large bowl until well combined
  3. Mix the dry ingredients and fold into the eggs and sugar
  4. Melt the butter and fold into the mixture
  5. Tip the brownie mixture into the baking tin and smooth over. Sprinkle over the frozen fruit and swirl through.
  6. Bake for approximately 30 minutes or until just firm to the touch and not wobbly. Cool completely before cutting
  7. For a gooey chocolate fondant dessert, remove from the oven whilst the centre is still slightly soft and wobbly – serve warm with ice cream

 

 

Ingredients

250g caster sugar

3 eggs

60g cocoa powder

90g plain flour

1tsp baking powder

190g unsalted butter

Couple handfuls of frozen berries – raspberries, cherries or blackberries work well!

 

Adapt this to gluten free by substituting the plain flour for gluten free plain flour
