Add a delicious twist to your brownies with some frozen berries.
Method
- Pre-heat oven to 160 degrees and line a 20cm(ish) square baking tin with baking paper.
- Whisk the eggs and sugar in a large bowl until well combined
- Mix the dry ingredients and fold into the eggs and sugar
- Melt the butter and fold into the mixture
- Tip the brownie mixture into the baking tin and smooth over. Sprinkle over the frozen fruit and swirl through.
- Bake for approximately 30 minutes or until just firm to the touch and not wobbly. Cool completely before cutting
- For a gooey chocolate fondant dessert, remove from the oven whilst the centre is still slightly soft and wobbly – serve warm with ice cream

250g caster sugar
3 eggs
60g cocoa powder
90g plain flour
1tsp baking powder
190g unsalted butter
Couple handfuls of frozen berries – raspberries, cherries or blackberries work well!
Adapt this to gluten free by substituting the plain flour for gluten free plain flour.
