A refreshing, spicy, tangy accompaniment to a wide variety of snacks & meals.
Method
- Chop tomatoes very small and put them into a bowl with the garlic.
- Mix in the onion, chilli, tomato paste and coriander. Stir well until all the ingredients are combined.
- Add the lime zest and juice, oil and seasoning to taste.
Ingredients
2 medium tomatoes
1 clove garlic, finely chopped
1 red onion, finely chopped
1 red or green chilli, deseeded and finely chopped
1 tbsp tomato paste
1 tbsp coriander, finely chopped
Half a lime, grated zest and juice
1 tbsp olive oil
Pinch of salt, sugar and black pepper
You can increase, reduce or omit the amount of chilli according to taste, or use other herbs such as flat-leaf parsley, if you prefer.
Serve with fried food, fish, tortillas, burgers, omelettes etc.
