Homemade Tomato Salsa

A refreshing, spicy, tangy accompaniment to a wide variety of snacks & meals.

Method

  1. Chop tomatoes very small and put them into a bowl with the garlic.
  2. Mix in the onion, chilli, tomato paste and coriander. Stir well until all the ingredients are combined.
  3. Add the lime zest and juice, oil and seasoning to taste.

Ingredients

2 medium tomatoes
1 clove garlic, finely chopped
1 red onion, finely chopped
1 red or green chilli, deseeded and finely chopped
1 tbsp tomato paste
1 tbsp coriander, finely chopped
Half a lime, grated zest and juice
1 tbsp olive oil
Pinch of salt, sugar and black pepper

You can increase, reduce or omit the amount of chilli according to taste, or use other herbs such as flat-leaf parsley, if you prefer.

Serve with fried food, fish, tortillas, burgers, omelettes etc.
