This gluten free recipe is suitable for coeliacs or people on a wheat-free diet to enjoy – but will sure to be a hit with anyone.

Method
- Wash the oranges and put them in a pan. Cover with water, bring to the boil and simmer for 1½ – 2 hours, or until soft. Remove from the water and allow to cool slightly.
- Oil the sides and base of a 9inch cake tin (preferably springform).
- Pre-heat oven to 190 C/375 F/Gas 5.
- In a large mixing bowl beat the eggs and sugar together well.
- Add the baking powder, almonds and orange flower water and mix well.
- Cut the cooked oranges in half and remove any seeds. Put the rest into a food processor and blend until fairly smooth.
- Combine them well with the other ingredients and pour into the prepared tin.
- Bake for about 1 hour. Cool a little before removing from the tin. It is meant to be slightly moist in the middle.

2 oranges
6 eggs
250g sugar
1 tsp baking powder
250g blanched ground almonds
2 teaspoons orange flower water or sweet liqueur (optional)
Use Seville Oranges if possible but sweet oranges are fine.
You will need to use a Food Processor or blender with this recipe.
