Orange Almond Cake

This gluten free recipe is suitable for coeliacs or people on a wheat-free diet to enjoy – but will sure to be a hit with anyone.

Serves 4 people

Method

  1. Wash the oranges and put them in a pan. Cover with water, bring to the boil and simmer for 1½ – 2 hours, or until soft. Remove from the water and allow to cool slightly.
  2. Oil the sides and base of a 9inch cake tin (preferably springform).
  3. Pre-heat oven to 190 C/375 F/Gas 5.
  4. In a large mixing bowl beat the eggs and sugar together well.
  5. Add the baking powder, almonds and orange flower water and mix well.
  6. Cut the cooked oranges in half and remove any seeds. Put the rest into a food processor and blend until fairly smooth.
  7. Combine them well with the other ingredients and pour into the prepared tin.
  8. Bake for about 1 hour. Cool a little before removing from the tin. It is meant to be slightly moist in the middle.

Ingredients

2 oranges
6 eggs
250g sugar
1 tsp baking powder
250g blanched ground almonds
2 teaspoons orange flower water or sweet liqueur (optional)

Use Seville Oranges if possible but sweet oranges are fine.

You will need to use a Food Processor or blender with this recipe.
