A quick filling salad for a side or a main dish.
Method
- Drain the tinned potatoes.
- In a bowl mix the mayonnaise, garlic and the lemon juice or vinegar.
- Add a pinch of pepper if you like.
- Mix all the ingredients together in a bowl and add herbs before serving.
This serves 4 as a side dish or 2 as a main dish.
Ingredients
500g tin of potatoes (drained) or cooked potatoes (chopped).
1 onion (chopped).
1 clove garlic (chopped).
5 tablespoons mayonnaise.
1 tablespoon lemon juice or vinegar.
1 teaspoon mixed herbs (fresh or dried).
Pepper.
Chef’s tip: You can store any leftovers for up to 3 days in the fridge (4 hours max outside the fridge). Add 1/2 teaspoon of curry powder or paprika to the mix for a more spicy flavour.
Nutrition tip: Potatoes are a good source of several vitamins and minerals, particularly potassium and vitamin C. Potassium is concentrated in the skin and may benefit heart health so if you cook poeatoes leave the skin on.
