Potato Wedges

A quick easy and healthier alternative to chips which can be served as a side dish or as a snack with a selection of dips.

 

Serves 2 people

Method

  1. Preheat oven to 200C/180C Fan.
  2. Put baking parchment on a baking sheet.
  3. Wash the potato and dry. Cut the unpeeled potato in to 8-12 equal sized wedges.
  4. Mix oil and honey in the bowl. Add the potato wedges and mix until evenly coated.
  5. Sprinkle the paprika and thyme oven the potatoes and mix well.
  6. Arrange the wedges on the baking sheet so that they do not overlap.
  7. Bake in the middle of the oven for 50 minutes turning the wedges half way through to avoid burning.

Ingredients

1 Large Baking potato
1tbsp. Sunflower oil
1tbsp. Honey
1tsp. Paprika
1tsp. Dried thyme

You can use Sweet Potatoes as well as, or instead of, normal ones.

To make this recipe vegan, simply omit or substitute the honey for maple or golden syrup.
