Veggie Sausage Rolls

Makes 3 sausage rolls.

Serves 3 people

Method

  1. Preheat the oven to 200. 
  2. In a bowl grate the cheese and the onion. Add the breadcrumbs and mix well. 
  3. Add the spices and the soft cheese to the mix and stir well until it binds together.
  4. Unroll the pastry and cut it in 3 down the shortest side. 
  5. Put the filling in the middle of each section. Brush one edge with egg wash and join. 
  6. Turn the sausage roll over the join on the bottom. 
    Egg wash the top and then use a butter knife to put small slits along the top. Cut into smaller rolls if you would like. 
  7. Place in the oven for 20/25 minutes.

Prep time: 15 mins

Cook time:20/25 mins

100g cheddar cheese  (or any hard cheese)

100g breadcrumbs (or 2 slices of stale bread crumbled)

1 onion

2 tbsp of dried mixed herbs

1 tsp mustard

1 tsp of paprika (or tomato paste)

1 tbsp of soft cheese

pinch of salt and pepper

1 ready rolled puff pastry sheet (375g circa)

1 egg wash (use milk alternatively)
