About this class

The joy of eating tasty, artisan breads is something many of us appreciate, but making your own at home is something special. Cat, will show you just how easy it is!

Your chef will lead you through the mixing, rising, knocking back, shaping and proving – processes that won’t be hurried in this laid-back session, which will include a shared lunch.

Learn a range of techniques including: shaping a loaf, shaping individual buns, how to tell if your bread is proved, how to tell if you have kneaded for long enough, how to tell if your bread is cooked, handling different types of dough and how to make an enriched dough. You will leave the course replete with new skills, a lovely meal as well as your bread to take home.

The course is suitable for beginners as well as more experienced bakers looking for new ideas and expert advice on their techniques.

By the end of the class you will work in pairs to create:

  • Confit garlic and rosemary focaccia 
  • Chocolate brioche buns 
  • White seeded sandwich loaf 
  • A shared lunch of a savoury bake with veggie toppings

About your chef

Having previously worked at Plateau and Kindling, Cat Rochefort is now a freelance chef specialising in cooking over fire. She finds her inspiration in nature, using foraged and seasonal ingredients to create beautiful dishes. Cat loves to bring the Sussex seaside to her plates by using local fish and seafood in her menus. She can also be found grilling at Hunter Gather Cook foraging school and teaching at Abinger Cookery School in Surrey.
