Asian Chilli Jam

This is a simple jam that effectively balances sweet, spicy and sour notes.  
It’s easy to make and is the perfect edible gift. 

Serves 2 people

Method

Put all the ingredients in a blender and blitz, then add to a medium pan. 

Bring the mixture to boil and boil 25-30 minutes or so, stirring occasionally o it does not catch on the base of the pan. 

Cook until the mixture thickens and becomes syrupy. 

The thicker the mixture the more likely is to burn and catch.

To test if the mixture is ready, remove a little of the jam with a teaspoon and leave it to cool for 5 mins or so; it should be thick and jamlike.  

Repeat every 5 minutes to reach the perfect consistency.  

Once the jam is cooked, take the pan off the heat and leave it cool for 15 minutes.

Pour into jars and place the lid on top.

450g tomatoes stems removed
(or 1 tin of chopped tomatoes) 

2 cloves of garlic, peeled and roughly chopped 

2 red chillies (deseeded and finely chopped) 

1 cm fresh ginger grated 

250g granulated sugar 

60g balsamic vinegar 

Salt/pepper 

3 Sterilized jars
