This wonderful simple bread makes a fantastic accompaniment to wholesome soups and stews and tastes excellent eaten with smoked mackerel pate. It is quick to make as it requires no rising.
Method
Pre-heat your oven to 190 degrees fan and line a baking tray with greaseproof paper.
Combine all the dry ingredients in a medium-large sized bowl.
Lightly beat the egg with buttermilk in a small bowl.
Tip the wet ingredients onto the dry and combine using a wooden spoon and eventually your hands.
Turn the dough out onto a floured surface and briefly knead to ensure it is well mixed. There is no need to knead this bread for longer than 30 seconds.
Shape into a round and score the top with a deep cross. Place into the pre heated oven on the lined baking tray and bake for approximately 25 minutes, or until golden brown, and when tapped on the bottom, makes a hollow sound.

150g wholemeal flour
50g plain flour
50g oatmeal or rolled oats
½ tsp bicarbonate of soda
½ tsp salt
½ tsp sugar
1 medium egg
150ml buttermilk or yoghurt
