Carrot Cake Energy Balls

Quick and easy to make with just few ingredients. No baking required! 
These store well so are great for meal prepping snacks for the week. 
They’re naturally sweetened with nutritious dried fruit. They make a great portable snack or dessert for kids and are a smart way to get some extra veggies in.

Serves 4 people

Method

  1. Soak the sultanas with warm water In a small bowl. 
  2. Grate the carrot.
  3. Add all the ingredients (except the coconut) into the food processor and blend until it becomes a dough.
  4. Scoop a tablespoon of the dough and roll it into a small ball.
  5. Cover each ball with coconut by rolling it in the bowl. 
  6. Put them in the fridge.
  7. It will last up to 3 days in the fridge.

100g oats 

50g carrots, grated (about ½ a carrot) 

50g nuts (or sunflower seeds) 

50g sultanas (soaked in water) 

1 tbsp jam (or honey, or golden syrup) 

1tsp vanilla (optional) 

1 tsp cinnamon

Small bowl of desiccated coconut  
(about 3 tbsp)
