Green Cous Cous

This is great as a meal on its own and also makes a delicious accompaniment to roast meat, chicken or fish. You can add peppers, aubergines or broccoli to the couscous as a variation.

Serves 2 people

Method

  1. Cook the peas in boiling water for 10 mins. 
  2. Place the couscous in a shallow bowl, then pour over 200ml boiling water and the salt. Cover the bowl with a lid, then leave for 5 mins until the couscous has swelled up and absorbed all of the water. 
  3. Ruffle with a fork to separate the grains, then stir through the peas and herbs.
  4. Make a dressing by mixing together the orange juice, white wine vinegar and olive oil, then stir into the couscous.  
  5. Season well with salt and serve.

Cooking time: 15 mins 

150g cooked peas 

200g couscous 

Pinch of salt 

Handful chopped herbs (we used mint and coriander) 

juice 1 orange (or lemon) 

2 tbsp each white wine vinegar and olive oil 

salt
