Vietnamese coffee bircher

This delicious dessert is almost like having your cake and eating it. Packed with natural sweetness and the goodness of apple and banana you can almost argue that this hits your five-a-day.

Serves 2 people

Method

  1. In the bowl mash the banana and then add the oats, yoghurt, chocolate, vanilla essence and mix together.
  2. Add the liquid, instant coffee and the golden syrup to the mixture and mix well.
    If the mixture is too runny add more rolled oats.
  3. Spoon the mixture in two small jars (or bowls) and leave covered in the fridge overnight (or at least for 4 hours).
    Serve them with banana and chocolate chips on top.

Ingredients

1 banana
70g rolled oats
200g Greek yogurt
2 tbsp of chocolate powder
150ml of milk (or evaporated milk)
1 tsp instant coffee
1 tbsp of Golden syrup
2 sterilised jars (or big glass)
1 tbsp of mixed nuts
1 tbsp of chocolate powder

CHEF’s NOTE: Traditional bircher has an apple grated into the bottom of it, once you’ve grated your apple quickly cover it with the oats, doing this keeps the air out and stops the apple going brown (enzymic browning is caused when oxygen comes into contact with peeled fruit).

NUTRITION TIP: Bananas are high in potassium, a mineral that promotes heart health and normal blood pressure. One medium-sized banana contains around 0.4 grams of this mineral.
Bananas are a healthy source of fibre, vitamin B6, vitamin C, and various antioxidants and phytonutrients.
